1½ Years (3 semesters), including Industrial Training/Internship in a 5-star hotel in the last semester 12th Pass in any stream Admission on based on Merit of Class 12th or Class 10th

The Diploma in Bakery & Confectionery programme offered at the Institute of Hotel Management Guwahati is designed to develop skilled professionals in the field of baking and confectionery. The programme focuses on providing practical knowledge and hands-on training required to prepare a wide variety of bakery and confectionery products.

Students are trained in the preparation of bread, cakes, pastries, cookies, desserts, chocolates, and other baked products, along with techniques in icing, decoration, and presentation. The course also emphasizes hygiene, food safety, costing, and kitchen organization, which are essential for successful bakery operations.

The programme helps students build creativity, precision, and technical skills required in modern bakeries, hotels, pastry shops, and food production units through extensive practical training in well-equipped bakery laboratories.

The programme is open to candidates who have successfully completed 10+2 (Senior Secondary) or its equivalent with English as one of the subjects.

The course duration is 36 weeks of academic training, followed by 24 weeks of Industrial Training in bakeries, hotels, or related establishments. The programme follows an annual examination system, including term-end examinations and internal assessments comprising both theory and practical components.
